So what did you do this past weekend? My daughter was sick, and I promised to surprise her after she wakes up from her nap. After a little googling around and looking through my fridge and freezer, I decided to make berry muffins with black chokeberries (for odd reason my husband bought them) and raspberries. She woke up from from the sweet smell and asked: "mama is this pie in the oven? No, it's cupcakes!"
These are not just any muffins. They are über healthy and delicious. I try to bake without eggs, dairy, sugar, and gluten if possible. These, however, were with whole wheat, almond milk, and blue agave syrup.
